My New Year's resolution to lose weight, low-carb 'stuffed pepper' meatloaf recipe, and Atkins coupons!

For about a week now, actually the week before the new year, I have cut out the high carbs from my diet.  I'm not actually following any specific diet, but from the past it's kind of based on Atkins.  For low carb snacks, I prefer olives, cheese, pork rinds, or  nuts.  My husband, on the other hand, prefers sweet snacks ... so I do buy Atkins bars and shakes for him.  He's not quite ready to join me on the diet yet, but I did print the coupons from Atkins so that I can pick up some when he's ready here shortly.

So, back to the meatloaf.  I've never really had a go to recipe for meatloaf ... but I was hoping to come up with something good without the high carb "filler".  Mom always made her meatloaf with oatmeal and I've made it like that too, but that's not allowed on my diet.

This meatloaf has a bit of a stuffed pepper taste.




Ingredients:
Package of meatloaf mix (about 1 1/2 lbs) - I'm not even sure what 3 meats are in it, but that's how the local grocer sells it.
3/4 of a jar of Uncle Charley Peppers and Onions - I used the hot - it's not that hot, just a bit spicy.  Walmart has this right in the meat area near the Uncle Charley Sausage.
About a cup of grated Parmesan (I bought a wedge at Aldi - they have great prices on cheese.)
2 eggs

Mix all together and form a loaf.  I don't have a loaf pan, so I just put it in a larger pan.





Bake uncovered at 350 degrees for 1 hour and then increase to 400 degrees for 15  more minutes.



The only thing I didn't like about this meatloaf is that their was a lot of grease in the pan, so I might try a leaner meat next time.  And, I might also cut the pepper strips up a little more.  But otherwise, it's a keeper ... and it's simple!

Carb count will vary by what meat you use.
0 for ground beef - 1.6 grams carbs for each 4 oz pork.
Uncle Charleys Peppers and Onions 32 grams for the whole jar (about 24 for 3/4 jar used).
1 cup of Parmesan Cheese 4.1 grams
2 eggs at .6 grams each would be 1.2 grams

So approximately 30 grams for the whole loaf, if you use all beef - higher if you use part pork.
